Turkey Surprise wrapped in Kale
Preparation: 15 minutes
Cooking time: 35 minutes
For the stuffed Kale 1 cup parboiled Basmati rice
1 lb uncooked ground turkey
2 eggs, large
½ cup dried cranberries, chopped
2 cloves of garlic, chopped
½ cup green onions, thinly sliced
Salt and freshly ground pepper to taste
8 leaves of Kale
2 cups chicken stock
1 cup leeks, sliced
1 onion, diced
½ cup fresh basil leaves, finely chopped
For the stuffed Kale
Cook the rice in boiling, salted water for eight minutes.
Cool and strain.
Mix all the ingredients, including the rice, but not the Kale leaves.
Divide the stuffing into eight portions and place in the centre of each Kale leaf.
Seal each leaf and place in a greased ovenproof dish and put to one side.
Preheat the oven to 350°F.
For the stock
Mix all the ingredients in a saucepan and bring to the boil.
Pour the stock onto the stuffed Kale leaves and put in the oven.
Bake for 25 to 30 minutes, basting the Kale twice during this time.
