Cranberry and chocolate bread
½ cup margarine, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla
1 ¼ cups frozen cranberries, defrosted and cut in half
¾ cup of milk
2 cups all-purpose flour
1/3 cup cocoa powder, sieved
1 teaspoon baking powder
1 teaspoon bicarbonate soda
¼ teaspoon salt
½ cup semi-sweet chocolate chips
½ cup walnuts, chopped
Preheat the oven at 350°F
Cream the margarine and sugar together
Beat in the eggs, one at a time
Add the vanilla, cranberries and milk. Stir and put to one side.
Mix the seven other ingredients in another bowl.
Add the first mixture and stir just enough to moisten the dry ingredients.
Pour into a rectangular bread tin and bake for 65 to 70 minutes.
