The cold helps to develop the characteristic cranberry color
- Fresh Cranberries
- Light colored raw sugar like Turbinado (white sugar will work)
- Crystalized Ginger
Coating:
- Take store bought or homemade crystalized ginger and dry it until it's dry enough to grind.
- Grind into a granular form then add raw sugar until you reach the desired intensity.
Syrup:
- Combine 50/50 raw sugar and water in a saucepan.
- Bring mix to a boil then cool to room temperature.
- Dunk the raw cranberries into the syrup for a few minutes up to few hours.
- Drain then roll the cranberries in the ginger coating.
- Let dry for a couple of hours until crunchy
